Materials
- Ghee – 2 tsp
- All purpose flour – 1 cup
- Gram flour – 1/2 cup
- Cardamom powder – 1/2 tsp

Instructions
- To make the perfect Soan Papdi, place a pan on flame, add 2 tsp of ghee, and heat on low flame.
- Next step – add 1 cup of all-purpose flour and 1/2 cup of gram flour and roast well on low flame until aromatic.
- After 10 minutes, turn off the flame, add 1/2 tsp of cardamom powder and mix well.
- Next step – sieve the roasted mix with the help of a strainer.
- Next step – place a pan on flame, add 1.5 cups of sugar, 1/2 cup of water, and 1/2 tsp of lemon juice, and melt the sugar on low flame(Do not stir).
- After 20-22 minutes, add a little sugar syrup into normal water; If sugar syrup becomes hard, this means the syrup is cooked perfectly.
- After the sugar syrup is cooked perfectly, turn off the flame and stir well until bubbles settle down.
- Next step – take a nonstick pan and grease it with ghee.
- Next step – spread the prepared sugar syrup on the pan and let it settle for 2 minutes.
- After 2 minutes, gently knead the syrup with the help of a spatula.
- After the sugar syrup turns thick, stretch & fold it 15-20 times like in the video.
- After the sugar syrup turns golden, make a ring and place it on a big plate.
- Next step – little by little, sprinkle flour mix on, make it like 8 and fold until 20-22 times like in the video.
- Next step – gently remove the extra flour mix from the Soan Papdi.
- Next step – take a small bowl and add some chopped dry fruits.
- Next step – add a small portion of Soan Papdi mix, fill it into the bowl and gently press.
- Next step – flip the bowl, and transfer the Soan Papdi to a plate.
